Sodium hexametaphosphate refers to hexamer (NaPO3)6. Sodium hexametaphosphate is a mixture of a variety of polyphosphates, i.e. sodium metaphosphate, and hexamer is one of them.

Hygroscopicity: strong, easy to hydrolyze to orthophosphate in warm water, acid or alkali solution.
Quality:
Colorless transparent glass flake or white granular crystals. It is very hygroscopic, and the dew can gradually absorb moisture in the air and become viscous. With calcium, magnesium and other metal ions can form soluble complexes. It is neutralized by soda ash or caustic soda solution and phosphoric acid, and after completion, it is continuously heated to 250 °C to generate sodium metaphosphate, and then heated to 620 °C to melt and polymerize into crystals, which is prepared by quenching tablets (granulation). Food-grade sodium hexametaphosphate needs to be purified after the neutralization reaction is completed, such as arsenic removal and heavy metal removal, and then heated and roasted. Food grade is mainly used as quality improver, chelating agent, fermentation leavening agent, pH value adjuster, etc.
The main applications in the food industry are:
Sodium hexametaphosphate is used in meat products, fish sausages, ham, etc., which can improve water holding capacity, increase adhesion, and prevent fat oxidation;
For soybean paste, soy sauce can prevent discoloration, increase viscosity, shorten the fermentation period, adjust the taste;
Used in fruit drinks and soft drinks, it can improve the juice yield, increase the viscosity, and inhibit the decomposition of vitamin C;
Used in ice cream can improve the expansion capacity, increase the volume, enhance the emulsification effect to prevent paste damage, improve the taste and color;
Used in dairy products and beverages to prevent gel precipitation;
Sodium hexametaphosphate aqueous solution sprayed on cured meat can improve antiseptic properties.
Used in soybean paste, soy sauce, increase viscosity, shorten fermentation period, adjust taste;
In canned meat, the fat can be emulsified and the texture can be maintained;
Used in meat products to improve water retention and prevent fat deterioration;
It is a softener for excellent water quality precipitation, and plays the role of water retention, expansion and bleaching in aquatic product processing;
Used as food quality improver, used in canned food, fruit juice drinks, dairy products, soy milk. It can be used as Ph regulator, metal ion chelating agent, adhesive and expansion agent. When added to beer, it can clarify the liquor and prevent turbidity
