Phosphate ohter application in food industry
In addition to the previously detailed uses, phosphate food additives are widely used in various food processing fields:
1. Beverage: used as acidity regulator, stabilizer and mineral nutrition enhancer;
2, potato products: used as stabilizer, color retention agent;
3. Rice products: improve the elasticity of products and improve the taste of products;
4, seasonings and instant soup: stabilizer, acidity regulator;
5. Hygroscopic powder food: anti-agglomeration, improve its free flow performance;
6. Starch products and modified starch;
7, baby food, functional food: mineral nutrition enhancer.
Polyphosphate is a polymeric dielectric and has the characteristics of inorganic surfactants, which can disperse poorly soluble substances in water or form a stable suspension to prevent the adhesion and agglomeration of the suspension. Because polyphosphate can make the hydrosol of protein form a film on the fat globule, so that the fat is more effectively dispersed in water, it is widely used in starch phosphorylation treatment, pigment dispersion, emulsified food (dairy products, ice cream, salads, sauces, etc.) and as a dispersion stabilizer for sausages, minced meat products, and surimi products.
For straight-chain polyphosphate, its emulsification and dispersion ability increases with the increase of chain length.
In addition, there are various roles in other processing areas:
Bond
Increased dispersion, acceleration, and intensity
Dispersants for emulsions and silicone coatings
Dispersants
chelate
Dental protection
